Pizza e Funghi (Pizza with Mushrooms)

Pasta per la pizza
Piastra Pepita

Preparare la pasta come da ricetta e condirla a piacere.
Scaldare la piastra Pepita in forno per 40 quindi cuocerci la pizza a 200 °C per 20 minuti

Make the dough according to the recipe and using the ingredients you like most.
Preheat the oven  and the plate at 200°C for 40 minutes then put the pizza on the Pepita plate and bake for 20 minutes.

Vol au Vent alla Marmellata (Jam Vol au Vent)

Pasta sfoglia

Stendere la pasta frolla e con uno stampino ricavare dei rotondi (a me 16)
8 di questi li ho lasciati interi, gli altri li ho forati nel centro con uno stampino più piccolo formando degli anelli
Ho spennellato con il latte la superficie dei primi 8 e sopra ad ognuno ho adagiato un anello.
Ho messo nel centro di ogni Vol au Vent un cucchiaino di marmellata e ho cotto a 150°C per 20 minuti.

English Version
Ingredients:Puff pastry

Roll the pastry out and using a cooki- cutter make some rounds (for me 16)
Leave 8 of them as they are
Using a smaller round cookie-cutter, cut the remainig 8 rounds into the centre in order to have 8 rings.
Brush the rounds surface with some milk and place the ring on the top of each rounds.
Fill each Vol au Vent with jam and bake at 150°C for 20 minutes.

Basilico e Origano fresco

Riscaldare in forno per 5-10 minuti a 150°C.
Servire con affettati.

English Version
fresh Basil and Oregano

Warm in the oven at 150°C for 5-10 minutes.
Serve with prosciutto and salame.

Torta al latte di Mandorle (Almond Milk Cake)

260 ml latte di mandorla
220 gr farina
80 gr burro a temperatura ambiente
1 uovo
150 gr zucchero
50 gr cacao
8 gr lievito

In una ciotola lavorare il burro con lo zucchero fino ad ottenere una crema, quindi aggiungerci il latte e il burro.
In un'altra ciotola unire gli ingredienti secchi.
Versare questi ultimi nel composto "lattoso" e mescolare.
Cuocere per 40°C a 180°

English Version
260 ml almond milk
220 gr flour
80 gr melted butter
1 egg
150 gr sugar
50 gr cocoa
8 gr baking powder

In a bowl beat together the butter and the sugar till creamy, add the egg and the milk.
In another bowl mix together all the dry ingredients.
Pour them into the milky mixture, stir in order to avoid lumps.
Pour into a tin and bake at 180°C for 40 minutes.

Torta al Limone con Frosting al Mascarpone (Lemon Loaf with Mascarpone Frosting)

3 uova
170 gr farina
170 gr zucchero
170 gr burro
2 tsp lievito
Scorza del limone

per il frosting:
Semi di papavero
Zucchero a velo

In una ciotola unire le uova, la farina, lo zucchero, il burro, il lievito e la scorza del limone.
Mescolare e versare nello stampo. per
Cuocere a 180°C per 35-40 minuti.
Per il frosting: mescolare il mascarpone on lo zucchero a velo.
Quando la torta si è freddata decorarla con il frosting, i canditi e i semi di papavero.

English Version

3 eggs
170 gr flour
170 gr  butter
170 gr  sugar
2 tsp baking powder
Zest of lemon

for the frosting:
Icing sugar
Poppy seeds
Candied fruit

In a bowl mix together  eggs, flour, butter, sugar, baking powder and zest of lemon.
Pour the mixture into a tin and bake for 35-40 minutes at 180°C.
Frosting: Mix together the mascarpone and the icing sugar.
When cake is cool spread the frosting on the top and add poppy seeds and candied fruit.

Limoncello Tiramisù

Succo di 2 arance
5 Tbsp Limoncello
300 gr Mascarpone
3 Tbsp Zucchero a Velo
1tsp estratto di vaniglia
Succo di 1 limone
Scorza di limone
Scaglie di cioccolato

Unire il succo di arancio con il limoncello e inzuppare i savoiardi.
Adagiare i savoiardi sul fondo delle cocotte.
In una ciotola lavorare il mascarpone con lo zucchero a velo, la vaniglia e il succo del limone fino ad ottenere una crema.
Versarle la crema sui savoiardi, coprire con la pellicola e lasciare in frigo.
Quando è ora di servirlo, decorare con lamponi, scorza del limone e scaglie di cioccolato.

English Version
Juice of 2 oranges
5 Tbsp Limoncello
Lady Fingers
300 gr Mascarpone
3 Tbsp Icing sugar
1 tsp vanilla extract
Juice of a lemon
Zest of a lemon
Chocolate flakes

In a bowl mix together the orange juice and the Limoncello.
Dip the biscuits into the liquid and line the bottom fof the cocotte.
In another bowl mix together mascarpone, vanilla, lemon juice and icing sufìgar till the mixture becomes creamy.
Pour it on the biscuits, cover with clingfilm and leave in the fridge
When it's time to serve decorate with raspberries, lemon zest and chocolate flakes

La Torta Margherita con Marmellata di Ciliegie

100 g di fecola di patate
140 g di farina 00
200 g di zucchero
160 g di burro a temperatura ambiente
6 uova
100 ml di latte
16 gr lievito (una bustina)

Separare i tuorli dagli albumi, quindi montare a neve quest'ultimi con un pizzico di sale.
In una ciotola unire le farine e il lievito.
In un 'altra lavorare lo zucchero con il burro fino ad ottenere una crema, quindi unire i tuorli e il latte.
Per  ultimo unire gli albumi montati a neve.
Aggiungere delicatamente le farine e continuare a mescolare dall'altro verso il basso.
Cuocere a 170°C per 45 minuti

English Version
100 gr potato flour
140 gr flour
200 gr sugar
160 gr butter at room temperature
6 eggs
100 ml milk
16 gr baking powder

Separate yolks from whites and beat them with a pinch of salt until stiff.
In a bowl mix together the flours and the baking powder.
In another bowl beat together the butter and the sugar till the mixture becomes creamy; add the yolks, the milk and the whites.
Stir carefully.
Add the flour and keep on stiring.
Bake at 170° for 45 minute.
When it's cold cut the cake into half and spread some jam.

Quadrotti di avena (Rolled Oat Squares)

175 gr burro a temperatura ambiente
275 gr zucchero di canna
1 uovo
4 cucchiai di acqua
1 cucchiaino di estratto di vaniglia
140 gr farina
1 cucchiaino di sale
1/2 cucchiaino di bicarbonato
370 gr avena

Lavorare il burro con lo zucchero fino ad ottenere un composto cremoso e chiaro.
Unire la vaniglia, l'uovo e l'acqua.
Continuare a mescolare.
In un'altra ciotola unire la farina, il sale , il bicarbonato e l'avena.
Incorporate il tutto nel composto precedente e amalgamate bene.
Distribuite l'impasto sulla placca da forno e cuocere a 180°C per 15 minuti.
Lasciare freddare un pochino e tagliare a quadrotti.

English Version

175 gr butter at room temperature
275 gr brown sugar
1 egg
4 Tbs water
1 tsp vanilla extract
140 gr flour
1 tsp salt
1/2 tsp baking powder
370 gr rolled oat

Work together butter and sugar till it's creamy; add vanilla, egg and the water.
Keep on mixing.
In another bowl mix together flour, salt, baking powder and oat.
Pour this flour mixture into the butter mixture and stir well.
Put the mixture on a oven tray and using a spatula smooth it.
Bake at 180°C for 15 minutes.
Let it cool and cut into squares.

Succo di 1/2 limone
4 pomodorini cigliegina
1/2 peperoncino piccante

English Version
Belgian Endive
Stale Bread (cut into pieces and soften with some water)
Vienna Sausages

Put in a blander:
1/2 lemon juice
4 cherry tomatoes
1/2 red chilli

RAK #3

Hi everybody,
this time I don't want to write about me but about a RAK made for me...
I know you can think this is an easy way to avoid a task but it's not, trust me.
Here the pic of the beautiful tulips bouquet my OH gave me last evening.

He put it on the table so when I opened the door to come in I foud it.
After this, I can surely say that making a RAK and receiving a RAK is a beautiful experience and it make me feel happy.
And now...let's think about me!
Last weekend I was in  UK and at the end of the show at the theatre the old lady next to me was not able to stand up without the crutch that was under her sit.
I took it and helped her; she was surprised and warmely thanked me

Second RAK

For this second RAK I have not a pic to post but just a story to tell.
On Wednesday my dughter Bea (from http://www.aboutbeatricef.blogspot.it/) and her friend Elisa spent the afternoon at home chatting and studying.
She lives far from us and when I arrived home after working at 17,30 I decided to take her home by car even if there was some traffic.
In this way she didn't have to take underground and bus; she was happy.
As for me I arrived home just a little late but satisfy for what I did even if it was just a small thing.

First Randon Act of Kindess

Let's begin:!
Yesterday I found a good parking space on our street : incredible!!!!
So I decided to move to that space my OH's car that was parked distant.
No metter if it was snowing and cold :-)
He was in office so he didn't suspect anything.
When he arrived home, late in the afternoon, he was very happy to find the car so close to our home, ready for the mornig after.

Il mio San Valentino

Pasta frolla
1/2 Panettone
1 uova
80 ml latte

Stendere la pasta frolla (altezza 3 mm) e con l'aiuto di una formina per biscotti rotonda, ottenere 12 dischi che serviranno per ricoprire la teglia dei muffin.
Frullare il mezzo panettone con l'uovo e il latte fino ad ottenere un composto omogeneo.
Riempire i cestini con un po' di composto di panettone e richiudere con dischi ottenuti utilizzando la pasta rimanente.
Cuocere a 175°C per 20 minuti

English Version

Shortcrust Pastry
1/2 Panettone
1 egg
80 ml milk

Roll our the pastry (3mm thick) and using a round cutter make 12 rounds to line the muffin pan.
Cut the panettone into small pices and put them into a blander with the egg and the milk.
We want to have a  fine texture.
Put a Tbsp of this filling into each case and press on the top the rounds made using the remaining pastry.
Bake at 175°C for 20 minutes

Orange Nut Bread

2 (315 gr) cups farina
1 (250 gr) cup di zucchero
1 cucchiaio di lievito
1/2 cucchiaino di sale
90 gr canditi o noci o furtta secca a gradimento
60 gr burro fuso
2 uova sbattute
3/4 cup (180 ml) succo di arancia
1 cucchiaino di estratto di vaniglia

In una ciotola unire gli ingredienti secchi e mescolare.
Fare un foro al centro ed aggiungere il burro, le uova, il succo e l'estratto di vaniglia.
Mescolare e versare negli stampi
Cuocere a 165 °C per un'ora

Englis Version
2 (315 gr) cups flour
1 (250 gr) cup sugar
1 Tbs baking powder
1/2tsp salt
90 gr dried fruits or candied fruits
60 gr melted butter
2 beated eggs
3/4 cup (180 ml) orange juice
1 tsp vanilla extract

In a bowl stir together all the dried ingredients.
Make a well in the centre and add butter, orange juice, eggs and vailla extract.
Stir until smooth.
Pour the batter into the pans and bake for 1 hour at 165°C
