Rondelle di Melanzane (Rounds of Aubergines)

Ingredienti:

1 melanzana
1 mozzarella
10 pomodorini
paprika, sale, olio

Tagliare la melanzana a rondelle e salarla in modo da farle perdere l’acqua. Lasciare riposare per 15 minuti quindi grigliarle.
In una pirofila fare strati di melanzana e mozzarella con paprika.
Guardine con pomodorini, e olive.
Cuocere in forno a 180° per 15 minuti

Ingredients:

1 aubergine
1 dices of mozzarella
10 cherry tomatoes
paprika, salt, oil

Cut aubergine into rounds and salt so the water goes away. After 15 minutes grill them.
In a pan make layers with aubergine, mozzarella with  paprika.
Decrate with cherry tomatoes.

Bake at 180°C for 15 minutes

Torta alla Barbabietola (Beetroot Cake)


Ingredienti:
250 gr barbabietole frullate precotte
150 gr olio
250 gr zucchero
3 uova
190 gr farina
2 cucchiaini di lievito
60 gr cioccolato

Per la glassa:
sciogliere 1 cucchino di barbabietole frullate in 2 cucchiai di acqua e aggiungere lo zucchero a velo quanto basta.
A piacere aggiungere 1 cucchiaio di succo di limone

Unire in una ciotola lo zucchero, la farina, il cioccolato e il lievito; in un’altra i tuorli, l’olio e le barbabietole grattugiate.
Unire i due composti e montare a neve le chiare delle uova che verranno incorporate per ultime.
Cuocere a 180°C per 50 minuti


English Version
Ingredients:
250 gr backed grated beetroot
150 gr oil
250 gr sugar
3 eggs
190 gr flour
2 tsp baking powder
60 gr cocoa

For the icing:
melt 1 Tsp grated beetroot with 2 Tsp water, add icing sugar If you like you can add 1 Tsp lemon juice

Put all the dry ingredients together (sugar, flour, baking soda and cocoa). In a bowl mix oil, yolks and beetroot and than mix the two doughs.
Whisk the whites and add to the mixture.
Bake at 180°C for 50 minutes

Hi

Hi everybody, I'm back!! I've had great time with my family and friends in Corfu! Now I'm happy to be here with you again sharing recipes and suggestions.
I don't want to waste my time so at the moment I've got a beetroot cake in the oven . . .hope it turns out well and I'm going to post the recipe asap.
